Les poissons, les poissons - Hee hee hee, haw haw haw
Finally! Fish time! If you don't like raw fish, you might want to skip this post. Cuz we're getting our crazy chef on...
So do you like fish, my little Bubblos? My mom & I took a fish class and we cooked all sorts. I've cooked enough fish now to feel pretty comfortable. But the class made me feel even more confident. (I'm trying to keep the big head in check though.)
We went to Viking for the class and were split into groups of 4. It's always interesting working with strangers at these things. I think one lady in our group would have liked to chop everything herself.
I don't know that I learned a ton about cooking the fish itself. But we made several yummy marinades & garnishes that I will definitely make again.
Tilapia marinading
Salmon with peppercorns
Tilapia cooking
I love-love the technique of putting the lemons on the grill pan. Such a simple thing but it really changes the flavor to make lemons more sweet and less biting. I've done this several times since. So good!
Halibut
Tuna with... Some sort of relish...
I really should have posted this sooner
Halibut with lemon sauce and lemon garnish
Halibut with an avocado relish & salmon with an herb butter
Plated
Well, that was maybe too much build up to not even provide a recipe. But it was a good class and The Mom & I had great fun. Tons-o-fish, fun! Also, I got a fish thermometer. Imafancyladynow!
