Balsamic Chicken Thighs

For our anniversary we usually we go out to eat somewhere nice.  But I felt like doing the cooking myself this year so I hit Charlie's for some bacon wrapped fillets.

We had steak, crab cakes, steamed veggies, and - Hub's fave - mac & cheese.  (I also added some tomatoes and roasted okra to really cram my own plate full.)  Turned out mighty fine, if I do say so myself.  Four years of mawwiage celebrated the way you should!  A steak dinner followed by pjs and pups.

But enough of giving you the meat-envy.  Let's skip back a day or so...

On Tuesdays, I take a Pilates class at my gym so I don't get home until almost 8pm.  The heck if I'm cooking then.  I guess I could pick something up or microwave something quick.  But I like a hot meal that I know is healthy.  Defeats the purpose of the gym if I eat bad-like once I get home, ya know?

So what do you do?  If you said eat a salad, the answer is no.  Once again we go with our good friend, the slow cooker.  Using a recipe found on our other good friend, Pinterest.

I made the recipe pretty close to the original recipe from Sugar-Free Mom.  Well, sorta.  I added extra garlic.  (Like always.)  And threw in some white onion, mushrooms, and carrots.  Cut a few things and added chicken broth to cover the extra veggies.  (I don't loooove that much balsamic vinegar.)

The flavor was nice!  It was fine as is but we're spice folks so the Hubs and I both added a little Sriracha.  (Do you know how Sriracha came about?  Interesting read here.)  Hubs ate his over some brown rice.  And I've got 2 days of lunches.  A cheap, easy recipe that tastes good and will cover several meals?  Yes, please.

Slow Cooker Balsamic Chicken Thighs

INGREDIENTS
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 garlic cloves, minced
  • 1/2 cup balsamic vinegar
  • 1/2 cup chicken broth
  • 8 boneless, skinless chicken thighs
  • White onion, thick chopped
  • 1 container white mushrooms, thick cut
  • Small package of carrots

DIRECTIONS
  1. Dump everything in slow cooker
  2. Cook on low 6 hours.
~ Sriracha to taste.
