Meatball Sliders, Sweet Potato Fries, and Cranberry Spinach Salad

Last weekend, I went home to C-Town to take care of my mama. She had rotator cuff surgery and I am VERY pleased to say that it was not a tear. Phew! Not that recovery is going to be a breeze. But good news just the same.

While waiting, I noticed one of my favorite things about going home to Columbia...

Mom was a little looped from the anesthesia. But she came out of it just fine and was actually awake quite a bit of the weekend. I figured I'd basically be watching her snooze (and possibly dressing her up in some St. Patrick's Day finery for my amusement) but we ended up having quality time. PJ's, movies, House Hunters & Project Runway All-Stars!

I was also given the go-ahead to raid the fridge -

I made Sunday Lunch for The Mom & The Dad. With my mom's one arm status in mind, I went with a menu of items that were easy to eat without any cutting:
I used olive oil - not veggie - and cut the sugar when sugar was required.

I will definitely be making this meal again for Hubs. If you make the sliders, I highly recommend King's Hawaiian sweet rolls. That savory and sweet was mmmm-mmmm-good.

Dad was out of town for the majority of the weekend. But when he got back, we got in some good quality time (and I Love Lucy) too. Then the weekend was over all too soon. Not a visit under ideal circumstances, but lovely just the same!
