Tex-Mex Caviar

My Graphic Design Girls got together over the weekend for a Mexican potluck birthday celebration.  As usual, they turned it OUT.  So many tasty things to munch!  I decided to go with a lighter dip with black beans and veggies.

I found my original recipe on a blog that I seemed to have lost the link to.  Bah.  The original looked good but I decided to nose around the interwebs for something similar that used more of what I had on-hand already.

Allrecipes called it Texas caviar.  And I say, close enough! 

Tex-Mex Caviar?
I deleted and added a few ingredients per my own taste.  And, per my own taste, I must say that it was even better the next day!  Should the occasion arise, I will definitely be making this again.  

Tex-Mex Caviar

INGREDIENTS
  • 1/2 onion, chopped
  • 1 green bell pepper, chopped
  • 1 bunch green onions, chopped
  • 1 avocado, chopped
  • 1 small can diced jalapenos, drained
  • 1 tablespoon minced garlic
  • 1 pint cherry tomatoes, quartered
  • Zesty Italian dressing to taste - I just added a couple splashed
  • 1 can black beans, drained
  • 1 can black-eyed peas,drained
  • 1 can yellow corn, drained

DIRECTIONS
  1. Mix it all together & refrigerate for 2 hours minimum.  Serve with tortilla chips.
