Pork Stirfry

I made the easiest stir fry this week.  (It still counts as stir fry if you don't have a wok, right?)  It turned out guh-reat!  It was actually so easy I hesitate to even bring it up.  Eh, but why not...  Gives me an excuse to put up a puppy pic too.  Heh.

I used some veggies that I had on hand and sliced them up easy-breezy on the mandolin.  Red & green bell pepper, onion, some green onion, julienned a carrot.  Garlic.  I cooked that all up in a skillet on medium heat with some soy sauce and a Korean marinade from Kroger.  While all that was going, I cooked some pork cutlets in the cast iron with a bit of the soy sauce/marinade mix.  Once nice and brown, I sliced the pork and tossed it in the veggie mix.  I did some 10 minute brown rice for the Hubs.  And done!  So much tastiness for such a thrown together meal.

Served with roasted zucchini seasoned with herbs de provence and blanched asparagus
I seriously love my mandolin.  All that chopping would have taken so lots much longer without it.

With such quick dinner prep, I had all the more time to take pics of the sleeping pups.  Although I took a bazillion pictures, I'll just bore you with just one:
