- Caribbean Jerk chicken skewers
- Tamarind-glazed shrimp
- Salad with macadamia nuts and a mango mint vinaigrette
- And a white chocolate banana tart with a caramel rum sauce.
The instructors were great. Very full of energy and tips. The cooking was fun and hands on. And every time you used something, someone would take it to the back and bring it back out clean. It was like magic! (Dream realized. Because that's the ONLY thing I don't like about cooking. The stinkin' dishes.)
Our class was pretty small (4 people) so we all got tons of attention and there was a nice class camaraderie. Really a wonderful night.
That was Thursday. Followed by a pretty nice & quiet weekend. Saturday, I made breakfast muffins. I sorta created them. (Ish. Ok, not really cuz they're pretty simple. But in my mind, I created a masterpiece. Anyhoo...) Crescent rolls rolled flat and put in muffin tins, cooked a little, and topped with egg, turkey sausage, and some 2% cheddar. Turned out delish! And really looked like a muffin.) Then Andrew and I hit the mall before going to our friends' kid's 2nd birthday party.
Sidenote: a 2 year old that LOVES baby dolls, opening a present of a baby doll, makes such a delighted, pure happy gasp-face. I would give her baby dolls all day to just watch that face. Except the newness would probably wear off quickly and then you're just swimming in a room of Miss Betsy-Wetsy dolls.
Saw Up in the Air with the Clooney. I really enjoyed it! And the Clooney just gets better with age. 500 Days of Summer on DVD, great and different. Mexican with the girls. And the weekend was over. Ahhhh, the memories.
After typing all that, it seems like a lot was done. Ahhh, the facade of activities.
Last night, I made sort of an Italian jambalaya. Great fun and had a nice kick. I'll definitely be making again.
There's some rice under all that... Just hard to see with all the delicious shrimps, tasty Italian sausage, and yummy chicken that it's buried under.
Alrighty, keep it classy, Internet. It's only Tuesday so we must behave.
